Simonnet-Febvre have been making sparkling wines in the Chablis region since their foundation in the 19th century. The Blanc de Blancs is a fairly new addition to the range. It is made with Chardonnay grapes sourced from the South of France and then unusually for a vin mousseux vinified using the traditional method with second fermentation in the bottle.
Tasting note
Pale bright yellow in the glass with fine bubbles. The palate is light and dry floral and ripe pear and yellow peach flavours.
